I love baking pretty much everything in my mini muffin pans! Muffins and cupcakes, of course, but also brownies, cookies, and a variety of other desserts! Mini Muffin Pan Desserts are the perfect bite sized treat (which means you can have more than one, right?). You can make these delicious brownie bites with or without the buttercream frosting! INGREDIENTS FOR THE BROWNIE BITES:
2 sticks of butter
2-1/2 cups of sugar
4 large eggs
1- 1/4 cups cocoa powder
1 tsp salt
1 tsp baking powder
1 tsp espresso powder (optional)
1 Tbsp vanilla extract
1 -1/2 cups all purpose flour
1 cup semi-sweet chocolate chips (optional)
INGREDIENTS FOR THE FROSTING:
2 sticks of softened butter
4 cups powdered sugar
1 tsp vanilla extract
1/4 tsp of salt (unless using salted butter)
2-3 Tbsp milk
DIRECTIONS FOR THE BROWNIES:
- Pre-heat oven to 350 degrees (325 if using a dark pan like mine) and spray 2- 24 count mini muffin pans with non-stick cooking spray (or use cupcake liners)
- In a small saucepan over low heat, melt butter completely. Stir in sugar and continue to cook for 1-2 minutes, stirring constantly. Do not allow sugar mixture to boil
- Pour butter mixture into a large bowl, beat in cocoa powder, eggs, salt, baking powder, espresso powder, and vanilla extract. Mix until well combined
- Stir in the flour and chocolate chips until well combined
- Scoop out brownie batter with a medium sized cookie scoop (batter will be very thick) and release into the mini muffin pan cups
- Bake for 8-9 minutes (do not over bake)
- Let the brownies cool and remove them from the pan
DIRECTIONS FOR THE FROSTING:
- Cream the butter, salt, and vanilla together and slowly add in the powdered sugar, alternating with milk as needed.
- Put frosting into a piping bag and frost the brownie bites or frost with a knife!
