RED VELVET CUPCAKES

People on Instagram are always asking me about my red velvet cupcakes, so I thought I would go ahead and share my favorite recipe with you! I have tested out many recipes and this one is by far my favorite one!
Ingredients: (yields approx. 24 regular size cupcakes)
- 2-1/2 cups cake flour
- 1- ½ cups of sugar
- 2 tbsp. cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1-1/2 cups oil
- 2 eggs
- 1 tsp. vinegar
- 1 tsp. vanilla extract
- 1 oz. no taste red food coloring
Directions:
- Pre-heat oven to 325 degrees and line cupcake pans with liners.
- Combine and sift all dry ingredients into a bowl of a mixer.
- Whisk all wet ingredients together in a large bowl.
- Pour the combined wet ingredients into the dry ingredients and combine using the whisk attachment on a mixer. Do not over beat.
- Scoop batter into cupcake pans and bake at 325 degrees for about 20 minutes or for mini cupcakes; bake for about 12 minutes.
TIME TO MAKE THE FROSTING!
Cream Cheese frosting: 4 tablespoons of butter (softened), 6 ounces of cream cheese (softened), 4 cups powdered sugar, 1/4 teaspoon vanilla. Cream together butter and cream cheese; add in sifted powder sugar, salt, and vanilla. And beat until well combined. Add food coloring for fun colors and top with candies and sprinkles. Note: When piping frosting, it is best to double the recipe.
(THE BEST) Chocolate Cream Cheese frosting: 8oz softened cream cheese, 1/2 cup softened butter, 3 cups powdered sugar, 1/2 cup cocoa powder, 1/4 teaspoon salt, 1 teaspoon vanilla. Cream together butter and cream cheese; add in sifted powdered sugar and cocoa. Add salt and vanilla. Top with candies and sprinkles. Note: When piping frosting, it is best to double the recipe.
