Baking with Melissa’s Soda Bread Drop Biscuits as seen on KCAL CBS NEWS Los Angeles on 3/16/2023

Here’s the recipe:

Preheat oven to 350 F

In a large bowl, mix together 2 cups of flour, 1/3 cup sugar, 1/2 tsp of salt, 3/4 tsp of baking soda.

In another bowl, beat together 1 egg and 3/4 cup buttermilk.

Add the wet mixture into the dry mixture and mix until combined! The dough will be sticky!

Add in 1/2 cup of raisins (optional).

Spoon out Biscuits onto a flat baking pan and bake 10-12 minutes. Or until the bottoms of the biscuits are lightly golden! Depending on how big or small you make your biscuits will determine how many you get! These soda bread drop biscuits are best eaten warm! So feel to warm them up in your microwave or air fryer if any of them happen to last beyond the time you take them out of the oven!

While your Soda Bread Drop Biscuits are baking in the oven, whip up a batch of my delicious Honey Butter!

Mix together 1 stick or 1/2 cup of softened salted or unsalted butter. Add in 1 tablespoon plus 1 & 1/2 teaspoons of powdered sugar, a pinch of salt, plus 2 tablespoons plus 2 teaspoon of honey (or use maple syrup)! Beat together until smooth and creamy and spread over the biscuits when they come out of the oven!
